Ingredients:
2 cups sweet corn kernels
1/2 tsp ground pepper
2 tsp sea salt
2 garlic cloves, pounded
2 red eschalots, pounded
2 coriader roots, pounded
8 tbsp plain flour
2 eggs
2 cups vegetable oil
1/4 cup sweet chilli sauce
Put two third of the corn into a blender and puree. Add the pepper, salt, garlic, eschalots and coriander and puree. Add the flour and process for 1 minute, then add eggs and process for another 30 seconds. Pour the mixture into a bowl and fold through the remaining corn kernels.
In a wok, heat the oil until just smoking. Take 1 tbsp of the batter and form it into a patty. Transfer the patty carefully into the hot oil and repeat the procedure until you have 6 patties frying at once. When they are just brown, turn and cook the other side. Remove with a spatula, drain on crumpled kitchen paper and keep warm. Continue until all the batter is cooked.

I've been seeing corn cakes all over the Internet lately and have been dying to make them!! Definitely on my list before summer is over.... Which is WAY too soon!
