I think I told your guys, I don’t really like weekday baking but I just had to do some baking on last Thursday night as we were required to bring in a plate of food to the office for the Pink Ribbon Big Breakfast Day.
I have been eying this Marshmallow Greenies recipe for quite a while and I thought it would be a good chance to try this recipe out. It was quite easy to put together. My marshmallow melted during the baking and hence the brownies turned out to be a little bit sticky.
I got some good feedbacks from my colleagues, however they are too sweet for some colleagues as well. Steve and me loved the pistachios flavour, but the melted marshmallows were a tab too sweet and sticky for us.
Marshmallow Greenies

Marshmallow Greenies
from The Crepes of Wrath
1 cup all purpose flour
1 cup ground, shelled pistachios (in the food processor or blender)
1 stick of butter
8 oz. white chocolate
1 cup sugar
4eggs
1tsp almond extract
1/2 tsp salt
1 1/2 cup marshmallows
A few drops green food coloring (optional)
A handful whole toasted pistachios (optional)
1. Preheat the oven to 350 degrees F.
2. Melt the butter and chocolate in the microwave or in a sauce pan. Be careful because white chocolate burns very easily, so make sure you check it often.
3. Once melted add the sugar and almond extract and mix well, then add the eggs, one by one.
4. Combine the flour, salt and pistachios and mix in, just until it’s all incorporated.
5. Now add your marshmallows and mix them in. You can also add your pistachios and food coloring if you’ve got them.6. Bake for 20-30 minutes until done but still moist in the center (a toothpick should come out clean).

It does not look "brown" :) but I love all the ingredients you used - white chocolates, pistachios. Yum!
