Kuih Bangkit


I made some kuih bangkit last night to bring over to my friend’s house today. I have never made kuih bangkit before and as I found the recipe at Little Corner of mine, I decided to give it a go. I thought it would be easy BUT I was wrong!! It was so messy, my kitchen was full of tapioca starch. Well, to be fair, it was my fault, I am a little clumsy baker.. hehehe..


I made my kuih bangkit with my cute hippo cookie cutter because my friend has a little three year old princess and I was sure she would like cute hippo kuih bangkit. My Kuih Bangkit turned out rather dry (I had accidently baked them for too long), my friends reckon they were a bit too hard. However the little princess loved the hippo kuih bangkit, she kept coming back for more. Hehe.. I am guessing she was impressed with the taste, not just the shape .. haha..



We had a great lunch – steamboat. It was lovely to spend a nice Saturday with friends; we had a great cooking session together. Nice weather, nice company, what more could I ask for. Thanks for the great lunch, Jean!!



Ingredients:-
2 1/2 cups tapioca flour/tapioca starch
-1 Tbp. butter, melted
-1 egg yolk (from large egg)
-1 cup icing sugar
-120ml thick coconut milk (or coconut cream)


Method:
1. Place a paper towel on a microwave safed bowl, add the tapioca flour and microwave for 1 minute. Set aside and let it cool. (You can fry the flour in the wok if you don't have a microwave.) Microwave extra tapioca flour for standby (to flour the surface) and kneading purposes.

2. Sift tapioca flour and icing sugar in a big bowl. Add melted butter, yolk & coconut milk. Knead until the dough is pliable. (If the dough is wet or soft, add more tapioca flour, 1 Tbp. at a time and knead until it becomes a harder dough. Likewise, if it's too dry, add more coconut milk).

3. Roll out the dough on lightly floured surface to about 3mm thickness. Cut into shapes with a cookie cutter (Or you can use the kuih bangkit mould (this required longer baked time). Arrange on lined baking tray and bake at 350'F for 15 minutes. It will puff when baked.

OMG jin hooi!! Small world!! I just discovered my hubby taught you Treasury Risk Management in 2004-05!! He recognised your photo and name!! He said it was a pity he didn't know you are such an enthusiastic cook then! :D

I love that hippo cutout! I always want to make cute cookies like that but usually end up with circles or squares because they're easier...
