As I had some curry leaves sitting in my fridge, I decided to create something out of it. And… this is what I have created for this weeks pasta night – Coconut Chicken Pasta. Steve was totally blown away by my little creation ;-)) loved the smell and the texture of the coconut, it paired really well with the exotic scent from the curry leaves, yummy!! It was buttery, salty, garlicky, and even with a little hint of sweetness, it was simply heavenly ;-))
Ingredients
1 chicken breast
3 tablespoons butter
3 tablespoons butter
4 cloves garlic
1/2 teaspoon salt
1 teaspoon sugar
dash of soy sauce
1 tablespoon Chinese cooking wine
Some curry leaves (about 3-4 springs)

7 tablespoons of desiccated coconut
2 cups of pasta
Method:
lightly brown the desiccated coconut and then set aside.Melt the butter, add in curry leaves, garlic, salt and fry until fragrant. Add chicken, sugar, soy sauce, wine, and coconut. Add in cooked pasta and stir well. Serve hot.
