Asian Pancake (a.k.a Apambalik)



I found this recipe at Ohbin’s blog and I was so eagle to give this recipe a try, reason being this pancake used to be my dad’s favorite snack and I really missed the taste of it. It has been quite a while since I last had Apambalik, it is a very common snack in Malysia, sold by some hawkers at the road side or night market. When I was in Malaysia, my brothers and me loved to treat ourselves with Apambalik every time we went to the weekly night market. Thanks ohbin for this recipe, I love it!! I make mine thinner because I prefer my pancake to be slightly crispy.

Ingredients:

Flour 170g
Rice flour 100g
Corn flour 30g
Baking powder 2 tsp
Soda Powder ½ tsp
Salt ½ tsp
2 eggs
Water / coconut milk 7 ounce
Sugar 150g

Filling:
Cream corn
Ground peanut
Sugar
Butter

Instruction:
Mix all the ingredients and put aside for 4 hours (in the fridge)
Heat up a pan with cover, then pour in a scoop of batter to cover the base of pan, cover with lid and let it cook for awhile
Uncover the lid, scoop some butter or margarine on top, then sprinkle groundnuts, sugar and cream corn, cover the lid again and let it cook till the base is golden brown.
Loosen the edge and fold into half. Continue till batter finish.
Serve hot.
