Yummy!!! It’s easy to make and delicious! But be warned.. the mixture are very delicious (I ate half of the mixture before I cooked them).. kekekekek.. soon I gonna become a cookies monster…
125gms softened good quality butter
1/3 cup castor sugar (Try not to reduce the proportion of sugar too much)
1 large egg
2/3 cup sultanas
1 cup self raising flour (sifted)
2-3 cups lightly crushed cornflakes (tip: use a plastic ziplock bag)
Cream butter and sugar with an electric mixer till fluffy and well combined. Use a wooden spoon, large bowl and lotsa arm muscle if you don't have a mixer *good luck* haha~. Add egg, beat well. Fold in flour and sultanas. Spoon a tablespoon of cookie batter into crushed cornflakes and turn to coat. Form fairly into a sphere shape and place on nonstick cookie tray. Repeat with the rest of the batter and place cookies 2-3 cm's apart to allow for spreading. Bake in preheated 150 degree oven for 15-18 minutes. Surface should be golden and crisp. Allow to cool on cookie rack before storing in airtight container. The cookies don't store too well...they get lose their crunch in 2-3 days.

Jin, you won't believe this but I swear its true. Just yesterday, a friend was telling me I should make cornflake cookies. And I laughed and said I'll try to find a recipe, not really intending to make it. But now that I see your recipe, I might give it a try.

What's next on your baking list? Hmmmm. I'm not sure. But I know that the next thing I want to make this week will be vanilla cupcakes with a violet buttercream. I don't think we'll be making the same thing. If we did, that would be freaky.
I will try these cornflake cookies one day soon hopefully.

Anyway, i am not making cupcakes this weekend, i am going to make lemon Madeleines.
Well, we came really close to making the same thing. I was going to make madeleines after reading about them from Sarah, at Sarah Cooks. I went to Essential Ingredients on Saturday to look for the madeleine trays. I only managed to find the new silicon ones. But I didn't buy it because it cost $40. Otherwise I would have been making madeleines. Instead, I decided to make cupcakes.

Gosh!!$40 for the mould. I paid $35for 2 of them and i still think they are expensive..hmmm.. i wonder what my hubby would say to me if i bought the $40 silicon one.
Jin, where did you buy your trays. I was thinking I would pay about $10 each at most because these madeleine trays are so specialised. It's not like I can make too many other things with them.
The silicon stuff is really hot right now. John Lethlean wrote this article about all the various kitchen equipment he has that is now silicone.

Hi thanh, I got mine from Myers in the city. Yeah, i saw some silicone one, but they are way too expensive.
