Chinese peanut cookies


This is the type of cookies we will normally eat during Chinese New Year in Malaysia. I always love these peanut cookies and I really wanted to try and make them myself. Stupid impatient me couldn’t find the peanut powder nor the shelled peanuts in the supermarket, I came back with a big package of roasted peanuts with their shells still on. So the result was I got to shell every single peanut and grind them into powder. It took me about 1 hour to get everything done. Ohh..well, it was worth everything, Steven and I loved them !!!!



Ingredients:

250g ground peanut powder (or peanut, grind into powder)
200g plain flour
1/2 tsp baking powder
110g icing sugar
1/4 tsp salt
140g peanut oil

Egg wash:
1 egg yolk lightly beaten with 1 tsp water

Method:

Mix ground peanut powder, plain flour, baking powder, icing sugar and salt in a big mixing bowl till well combined.

Pour in oil slowly and mix till a piable dough is formed. You might need a little more than the stated amount if the dough is too dry.

Shape into small bite-size pieces. I used a bottle cap and cling film to get a consistant shape.

Place about 2cm apart on lined baking sheet. Apply egg wash.

Bake at 170C for 18-22 minutes or till golden brown(depending on oven).
